Oreo Bread Pudding with Vanilla Bean Sauce

Ingredients:

For Custard
6 eggs
3 1/2 Cups Whole Milk
3 1/2 Cups Heavy Cream
2 Cups Granulated Sugar
1 Tsp Vanilla Extract
½ Package Double Stuffed Oreos


For Bread Pudding
1 loaf Texas Toast cubed
1/2 Package Double Stuff Oreo Cookies


For Sauce
¼ Cup Granulated Sugar
1Tbsp Powdered Sugar sifted
¼ tsp Salt
2 Egg Yolks
3 Tbsp Cornstarch
1 Cup Whole Milk
1 Vanilla Bean
2 Tbsp Salted Butter
1 ½ Cup Heavy Cream

Instructions:

For Custard
Using food processor grind Oreos until fine sand like consistency. Whisk all ingredients together until
well combined. Chill until ready to use


For Bread Pudding
Pre Heat oven to 350 degrees F

 

Cube bread and spread out on baking sheet. Toast slightly in oven until lightly toasted and dry

 

Allow bread to cool and dry out to room temperature
Using food processor, pulse remaining Oreos into medium sized chunks. Separate in half and set half
aside


In large bowl combine toasted bread, ½ Oreo chunks, and custard mix. Using your hands, make sure
custard completely coats the bread. Massage custard into bread and allow to soak for 10 minutes.

 

Spray 6x9 baking dish with non-stick spray and add bread mixture to dish
 

Cover with foil and place in oven for 1 hour. Remove Foil from dish and continue to cook for 5-7 minutes to brown the top of the bread pudding


While bread pudding is baking, assemble the sauce


For Vanilla Bean Sauce
Separate 2 large eggs. Discard egg whites


Whisk 2 Tbsp granulated sugar, powdered sugar, salt and egg yolks in medium sized bowl


Whisk cornstarch into sugar mixture 1 Tbsp at a time making sure there are no clumps. Set mixture aside


Scrape out Vanilla Bean caviar. Do not discard pods


In medium sized sauce pot, bring milk, vanilla caviar, and vanilla bean pods and remaining 2 Tbsp of
sugar, to a simmer until sugar has dissolved


Remove vanilla pod and discard


Slowly whisk a third of the milk mixture into the egg yolk mixture, making sure to temper the eggs so as
not to scramble the eggs. Whisking constantly, gradually add remain milk mixture to to egg yolks


Pour the entire mixture back into the sauce pot and return to heat. Whisking constantly until thickened,
about 2-3 minutes


Remove from heat and stir in butter


To Assemble
Portion bread pudding into serving dishes, ladle hot vanilla bean sauce over bread pudding, and top with remaining Oreo chunks
